Stravecchio al Torcolato Maculan cheese


Stravecchio al Torcolato cheese comes from the slopes of our high hills on the Plateau of Asiago. Here we select cheeses produced from milk from the summer pastures, at around 1,000 meters above sea level.

After maturing for 2 years, the cheeses are scraped, brushed, and then immersed in the moist skins of the Torcolato grapes for 40 days. Storage in a vacuum and in the fridge keeps the cheeses’ aromas and flavors intact.
